It is difficult to say whether it is correct or not, because in different regions kulesh is cooked in different ways, from those mushrooms and products that are available. If the fast is over, then millet porridge is boiled with bacon or cracklings. For example, the Don Cossacks in the campaigns cooked "kulesh float", in large vats on a fire, instead of cereals they used cattail, and sometimes other plant roots. A similar dish can be found in Belarusian cuisine, Russian, Ukrainian. Of course, the recipe has already been adapted to our time, the Cossacks did not fry and did not cook mushrooms separately. Everything was put in a vat and languished over the fire. Moreover, the porridge should have a "mushy" consistency, something in between porridge and soup. Let's try?

How to make Lean Mushroom Kulesh

1. Prepare food. Wash and peel vegetables. Mushrooms can be used not only of one type, you can use a mixture, I took part of the mushrooms, part of butter, they are very fragrant. Take the ones sold in your area. Even dried ones are suitable, only they need to be soaked for 2 hours before cooking. 2. Pour the washed and prepared mushrooms with a liter of clean water and boil for about 20 minutes. Salt the water. 3. Coarsely chop the onion and carrots and fry in vegetable oil until half cooked. 4. Rinse the millet to clean water. 5. Cut the potatoes into pieces. 6. Put fried vegetables, millet, potatoes in a cauldron.
