I present to you a cool idea on how to make a mint pea puree soup. Its plus is that it is all-season; it can be cooked both from fresh young green peas and from frozen ones. Leek can be safely replaced with regular onions. If you want a creamier option, add some cream at the end of the boil, which is great too. You can serve this soup with crackers, a pinch of grated cheese or seeds, for example.

Ingredients:
- Green peas - 500 Grams
- Leeks - 2 Pieces
- Mint - 1 Bunch
- Butter - 1 Tbsp. the spoon
- Salt and Pepper - To taste

How to make Pea & Mint Puree Soup
1. Wash and dry the leeks and mint. In a small saucepan, bring water to a boil. 2. Heat butter in a frying pan, put onion and simmer over low heat for 5 minutes, stirring occasionally. Season with salt and pepper to taste, if desired. 3. Put the peas in boiling water. After boiling again, cook for 3-4 minutes. Throw the peas immediately in a colander, save the water in which they were cooked and put on ice to stop the cooking process. 4. In a blender bowl, send the leek, peas, mint leaves and pour in a little water. Whisk, evaluate the consistency and add more water if necessary. 5. Pour the finished pea and mint puree soup into a saucepan, put on fire and bring to a boil. Add more salt to taste if needed. Remove from heat immediately after boiling and serve. Enjoy your meal!
