How to cook "Homemade Eggplant Caviar"
Bake the eggplants in the oven until soft. Pre-prick them with a fork, otherwise they will literally explode in the oven. You can boil eggplants in water, it doesn't matter. Then cool slightly and peel. Peel the bell pepper from the seed pod and wash. Peel and wash onions. Grind the eggplant, bell peppers and onions. Those who like spicy can add hot pepper. Wash the tomatoes and also mince them. Stir all the caviar ingredients and simmer over low heat for 35-40 minutes, stirring occasionally. After 20 minutes of cooking, pour in the sunflower oil, add sugar and salt to taste.
