Main ingredient: Mushrooms / Dried mushrooms
Dish: Soups / Soups-puree
- Dried mushrooms - 900 Grams
- Shallots - 200 Grams
- Garlic - 3 Cloves
- Chicken or vegetable broth - 1 Liter
- Cream - 120 Milliliters
- Vegetable oil - 4 Art. spoons
- Butter - 4 tbsp. spoons
- Salt, spices - To taste
How to make Dried Mushroom Soup
Pour boiling water over the dried mushrooms, let them stand for 10-15 minutes so that they swell. Then in a large saucepan, combine butter and olive oil, put on fire. As soon as bubbles appear on the mixture of oils, add mushrooms, salt and cook for 10 minutes. Reduce heat and add chopped shallots, garlic and spices, stir. Grind ready-made mushrooms with vegetables in a blender. Add broth to mushroom puree. Pour the cream into the soup and heat over high heat, 3-5 minutes. Taste and season to taste. Enjoy your meal!
