How to cook "Asian Fried Potatoes with Vegetables"

Peel the vegetables, wash and dry well with a towel. Cut the potatoes into medium-sized cubes. Heat the oil well in a wok, deep saucepan or cauldron. Fry the potatoes until golden brown and half cooked. Add carrots and eggplant, cut into cubes slightly thinner than potatoes. Cook, stirring occasionally, for 3-4 minutes. Add bell peppers and garlic, cut into strips. Cook for a couple of minutes. Add thin strips of onion. Drizzle with sesame oil. Stir and season with salt to taste.
