How to make Warming Autumn Soup
Wash and peel vegetables. Cut the pumpkin into small cubes. Also chop up the rest of the vegetables. Grate the cheese on a fine grater, disassemble the chicken into fibers, chop the parsley. Heat oil in a heavy-bottomed saucepan. Fry vegetables in the following order: pumpkin and carrots for 5 minutes, stirring occasionally; then add onion and courgette, cook for another 2-3 minutes. Pour in water or broth, bring to a boil and simmer for 5 minutes. Add chicken, cheese, bring to a boil.
