I will describe in more detail how to cook a quiche with chanterelles below. For this recipe, nutritional yeast is used (not to be confused with baker's), they give the dish a special cheese-nut flavor. The colder the water for the dough, the tastier it will turn out. I recommend putting the water in the freezer in advance for a couple of hours.

Ingredients:
- Flour - 250 Grams
- Vegetable oil - 60 grams
- Water - 310 Milliliters (160 ml. - for dough, 150 ml. - for pouring from tofu)
- Salt - 1 teaspoon (1/2 tsp - in the dough, 1/2 tsp - in the filling)
- Tofu - 250 Grams
- Lean mayonnaise - 2-3 tbsp. spoons
- Nutritional Yeast - 2 Tbsp spoons
- Chanterelles - 250 Grams
- Onions - 1/2 Pieces
- Vegan Cheese - 50 Grams
- Green onion - 1/3 Bunch

How to cook "Quiche with chanterelles"
Prepare all ingredients. Wipe the chanterelles with a damp cloth from dirt, then cut the large mushrooms, and leave the small ones whole. Fry the chanterelles with the onions over medium heat until golden brown. Transfer the chanterelles to a bowl, add grated cheese and chopped green onions. In a blender, grind the tofu, nutritional yeast, lean mayonnaise, salt and water until smooth. Prepare an emulsion for the dough. Pour ice water into the vegetable oil in a thin stream, while beating the mixture with a mixer. In a large bowl, combine salt and flour, then add emulsion. Knead a homogeneous and plastic dough.
