How to cook "Dried Plums with Garlic, Herbs and Salt"
I use dried basil and fresh rosemary, but you can experiment with herbs. Wash the plums and immerse them in a boiling soda solution (1 tsp baking soda per liter of water) for 20 seconds. After rinsing, carefully cut in half and remove the seeds. Place the plums on a drier rack or baking sheet and sprinkle with thinly sliced garlic. Season with salt to taste. Sprinkle with herbs. Send to the dryer for 3-4 hours, setting the temperature to 55 degrees. Then increase to 65 degrees and dry for another 3-4 hours. Let the plums cool completely and dry at the last stage at a temperature of 70 degrees. I like plums with a wet center, so I dry them in the last step for about two hours. But you can leave it for longer.
