Prepare all ingredients. Cut the tomatoes into halves. Large tomatoes can be cut into quarters. Core can be cut if desired. Place the tomatoes on a drying tray. Sprinkle them with coarse salt, and dry for about 15-20 hours at 100 degrees. Tomatoes should remain soft and pliable, but not damp. Heat the white wine vinegar and water in a saucepan and bring the marinade to a boil. Boil tomatoes in it for 5 minutes, then dry thoroughly. At the bottom of the jar, place the Italian herbs and garlic cloves, cut lengthwise. Fill the jar half-tight with sun-dried tomatoes, then add the garlic slices and more tomatoes again.
