How to cook "Salted herring in a bottle"
Prepare the indicated ingredients. Purchase herring fresh or frozen and defrost it in advance. Pour salt and granulated sugar into a deep container, add bay leaves and black peppercorns there. Pour in cold water and stir everything thoroughly so that both salt and sugar are dissolved in the liquid. The water can be ordinary tap water, filtered water, etc. Peel the herring from the scales, rinse in water, but do not rip the belly of the fish. Cut off the neck of a 1.5 liter bottle and place the herring head down. Pour the cooked brine over the fish. Try to cook enough brine so that the fish is covered with it. Place the bottle in the refrigerator for 2-3 days. To get slightly salted herring, soak the fish in brine for 2 days, for more salted herring - 3 days. Turn the carcass every day for even salting. After the indicated time, remove the salted herring from the bottle, rinse and cut off the head, fins and open the abdomen, removing the entrails.
